Zucchini and sundried tomato pasta

Ingredients

  • 2 servings of fusili/rotini pasta
  • 4 zucchini
  • 1 onion or 2 shallots, sliced
  • 10 sundried tomatoes, chopped/cut
  • 4 cloves garlic, minced
  • parmesan cheese, grated
  • salt and pepper to taste
  • olive oil
  • smoked chicken, optional

Directions

  1. Cook pasta in salted and oiled water, drain, and set aside.

  2. Saute zucchini, sundried tomatoes, and onion until onion is translucent. Add garlic and chicken.

  3. Toss through with pasta, with some olive oil, salt, and pepper to taste.

  4. Add parmesan cheese and serve.
