Frittatas

Serves 2 people

Ingredients

  • 1 cup of vegetables, such as peas, sundried tomatoes, onion, zucchini, spinach, bell peppers, etc.
  • 6 eggs
  • 1 cup parmesan, or 1 cup mozzarella and several tbsp parmesan
  • salt and pepper to taste

Directions

  1. Preheat oven to 175C.

  2. Saute vegetables in an oven-safe skillet until soft and whatever liquid has evaporated. Take it off the heat.

  3. Beat eggs and season to taste. Add eggs and half of cheese to skillet.

  4. Put pan into oven for 15 minutes. Immediately sprinkle other half of cheese over frittata.
