Chicken Salad with Cabbage & Mint

Ingredients

  • 1 lb boneless skinless chicken breast
  • 1 small head Napa. Savoy or Green cabbage
  • 2 carrots, peeled & shredded
  • 3/4 cup fresh mint, roughly chopped
  • Salt
  • Fresh ground black pepper
  • cayenne
  • 1 T fish sauce (can substitute soy sauce)
  • 1 T rice vinegar
  • 1/2 t sesame oil
  • 1/4 cup fresh squeezed lime juice

Directions

  1. Cook, cool & chop chicken into small pieces

  2. Shred cabbage, peel & shred carrots, and combine cabbage, carrots, chicken, and 1/2 cup of mint.

  3. Season with salt, pepper, and cayenne

  4. Combine fish sauce, rice vinegar, and sesame oil and pour it over cabbage mixture.

  5. Toss well, and garnish with remaining mint.
