Chicken Salad with Cabbage & Mint

Ingredients
- 1 lb boneless skinless chicken breast
- 1 small head Napa. Savoy or Green cabbage
- 2 carrots, peeled & shredded
- 3/4 cup fresh mint, roughly chopped
- Salt
- Fresh ground black pepper
- cayenne
- 1 T fish sauce (can substitute soy sauce)
- 1 T rice vinegar
- 1/2 t sesame oil
- 1/4 cup fresh squeezed lime juice
Directions

Cook, cool & chop chicken into small pieces

Shred cabbage, peel & shred carrots, and combine cabbage, carrots, chicken, and 1/2 cup of mint.

Season with salt, pepper, and cayenne

Combine fish sauce, rice vinegar, and sesame oil and pour it over cabbage mixture.

Toss well, and garnish with remaining mint.
