Crab Quesadillas with Papaya Salsa

Ingredients
- 1 1/2 cups chopped papaya or mango
- 1 tablespoon thawed orange juice concentrate
- 1 1/4 pound thawed snow crab legs
- 8 (8 inch) flour tortillas
- 1 1/2 cups shredded Dolfino Jalapeno Havarti cheese
- 1/4 cup sliced green onions
Directions

Spray grill rack with nonstick cooking spray.

Preheat grill to medium

In a small bowl stir together papaya or mango, and orange juice concentrate.

Set aside.

Use kitchen scissors or a mallet to crack crab shells.

Remove meat and break into chunks.

Discard cartilage.

Place 4 flour tortillas on the grill rack.

Quickly sprinkle with crabmeat, cheese, and green onions.

Top with remaining tortillas, pressing down slightly on each.

Grill for 5 to 7 minutes or until lightly toasted, turning once.

Cut each into 6 wedges.

Serve with papaya mixture.

Note: Can substitute crab with 1 1/2 cups cooked, sliced chicken
