Cheddar Crisps

Ingredients
- 3/4 c butter, softened
- 4 1/2 c grated sharp yellow Cheddar
- 3 egg yolks
- 1 1/2 c flour
- 1 1/2 t freshly cracked black pepper
Directions

eheat oven to 350.

In a standing mixer bowl with a paddle, combine the butter and cheese. Cream together on medium speed until fluffy.

Add the egg yolks and mix until smooth and creamy.

Whisk the flour, salt and pepper together in a small bowl and add to the mixing bowl at slowest speed.

Mix just until the dough comes together in a ball.

Chill the dough, covered, for 10 minutes

Form 1" balls with a small scoop and place on a parchment lined sheet pan. Flatten slightly with a fork that’s been dipped in flour.

Bake for 15 minutes at 350 until well browned and a little crispy on the edges. Cool on a rack for 10 minutes. Can be reheated once.
