Pesto

Serves 6 people

Ingredients

  • 2 cups fresh basil leaves
  • 1 small garlic clove, peeled
  • 1/4 cup pine nuts
  • 2/3 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 1/4 teaspoon pepper

Directions

  1. Combine basil, garlic, pine nuts, and Parmesan cheese in blender container.

  2. Pulse on/off 5 or 6 times to coarsely chop ingredients.

  3. Trickle in olive oil with blender running until the basil mixture is a puree.

  4. Remove pesto from blender container.

  5. Stir in pepper and salt to taste.

  6. Makes 3/4 cup sauce or 6 2 tablespoon servings.
