Clam Bake in a Pot

Ingredients

  • 1/2 cup white wine
  • 2 pound collard greens or kale
  • 8 small potatoes, scrubbed, unpeeled
  • 8 small onions, skinned
  • 1 lobster, cut into 8 pieces
  • 8 half ears corn, fresh or frozen
  • 16 clams
  • 16 mussels
  • melted butter
  • lemon wedges

Directions

  1. Put wine and greens in bottom of large heavy pot.

  2. Lay potatoes and onions on top.

  3. Cover tightly.

  4. Steam 15 minutes.

  5. To kill lobster, sever the spinal cord with a heavy knife by inserting it between he body and the tail sections.

  6. Add corn, lobster, and clams to pot.

  7. Steam 10 minutes.

  8. Add mussels.

  9. Steam until clams and mussels open (about 3 to 5 minutes).
