Adele’s Chicken Broth

This is the chicken broth used in cauliflower soup.

Ingredients
- dark meat chicken (leg quarters, backs)
- 3 celery stalks
- 3 onions peeled and quartered
- 3 garlic cloves large (or 6 small), peeled
- 3 carrots peeled
- 1/2 tsp whole black peppercorns
- 1 T salt

In an 8-quart stock pot, simmer ingredients for one hour.

Remove the meat and let broth cool.
