Crockpot Tortilla Chicken Soup

Ingredients

  • 2-4 chicken breasts, cut into serving pieces
  • 1 large onion, finely diced
  • 1 c. finely diced celery
  • 4 cans chicken broth
  • 2 14-oz. cans diced tomatoes
  • 1 c. diced carrots
  • 1 can whole kernel corn, if desired
  • 1 large diced zucchini
  • Salt
  • Pepper
  • 4-6 generous shakes of chili powder
  • Garnishes:
  • Cheese
  • Tortilla chips
  • Avocado
  • Lime juice
  • Sour cream
  • Cilantro

Directions

  1. Put cut-up chicken into large crockpot with diced onion, celery, salt, pepper and two cans chicken broth.

  2. Cook on high for 4-5 hours.

  3. Add remaining cans of chicken broth and finely diced carrots to pot.

  4. Continue cooking on high until carrots are tender.

  5. Add several shakes chili powder (at least 4 to 6), stewed tomatoes and zucchini and corn, if desired.
