Ingredients
- 3/4 cup (1 1/2 sticks) unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup powdered sugar
- 2 Tablespoons grated lime zest (about 2 medium limes)
- 2 Tablespoons fresh lime juice
- 1/4 teaspoon salt
- 1 1/2 cups flour (you can use whole wheat pastry flour if you feel like being healthier, as it actually tastes good in this recipe)
Directions

Cream butter and sugars until light and fluffy.

Add lime zest, lime juice, and salt until combined.

Add flour, and beat until just combined.

Scoop dough onto plastic wrap and use it to form the dough into a log.

Flatten the log so that it becomes a rectangle log and seal the plastic wrap for chilling in the refrigerator.

Chill for at least 3 hours, and up to a day.

eheat oven to 350.

Remove chilled dough and cut with a sharp knife into rectangular slices.

Put immediately onto baking sheet, about an inch apart.

Bake on parchment-lined baking sheets for about 15 minutes total, rotating sheets about halfway through baking time.

Look for cookies to be slightly puffed and barely golden brown.

Let cool completely.

Start with about 3/4 cup powdered sugar in a bowl and add 1 teaspoon of lime zest.

Gradually add about 5 Tablespoons of lime juice until the icing is the right consistency.

Ice the cookies and let harden.
