Nacho Supper

Serves 5 people

Ingredients

  • 1-2 cups cooked rice
  • 1 can refried beans
  • 1 lb. ground beef, browned
  • 1 pint salsa
  • 1 can diced green chilies
  • I can sliced olives (optional)
  • 1 cup grated cheese

Directions

  1. Layer ingredients in order in a 9×9 baking pan.

  2. Bake at 350 for 20 minutes, or until warmed through.

  3. Serve with chips (my family always ate it with Doritos growing up, which the in-laws think is foul. Too bad. It’s already weird—who has chip dip for dinner?).
