Sweet and Tangy Chicken

Ingredients

  • 1 lb. boneless skinless chicken breasts, cut into 1/2-inch cubes
  • 3 Tbsp. taco seasoning
  • 1-2 Tbsp. oil
  • 1 11-oz jar chunky salsa
  • 1/2 c. peach preserves

Directions

  1. Place the chicken in a large resealable bag; add taco seasoning and toss to coat.

  2. In a skillet, brown the chicken in oil.

  3. Combine salsa and preserves; stir into skillet. Bring to a boil.

  4. Reduce heat; cover and simmer 2-3 minutes or until juices run clear. Serve over rice.

  5. Makes 4 servings.
