Zucchini Crisp

Ingredients

  • 8 c. cubed and peeled zucchini
  • 3/4 c. lemon juice
  • 3/4 c. sugar
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • topping:
  • 1 1/3 c. brown sugar
  • 1 c. oats
  • 1 c. flour
  • 2/3 c. cold butter or margarine

Directions

  1. Combine zucchini, lemon juice, sugar, cinnamon, and nutmeg. Pour into greased 9×13 pan.

  2. Combine topping ingredients and sprinkle over zucchini.

  3. Bake at 375 for 45-50 minutes.
