Ingredients
- 6 chicken breast halves
- 1/2 c. flour
- 1 tsp. ginger
- 1 tsp. salt
- 1/2 tsp. pepper
- 1-2 Tbsp. oil
- 1 c. pineapple juice
- 1 tsp. soy sauce
- 1/2 c. sliced mushrooms
- 1 bunch green onions, sliced
- 1 can pineapple rings
- 1/2 c. slivered almonds
Directions

Shake chicken breast halves in plastic or paper bag with flour, ginger, salt, and pepper.

Brown chicken in oil and place in 9×13 pan.

Pour pineapple juice and soy sauce over chicken. Top with mushrooms and green onions.

Bake at 350 for 30 minutes.

Place pineapple ring over each piece of chicken and sprinkle with slivered almonds.

Bake another 15 minutes or until chicken is done.

Serve with coconut rice (rice combined with toasted coconut).
