Grilled Lemon Chicken

Ingredients

  • 4 chicken breasts
  • 2 Tbsp. olive oil
  • 1/4 c. fresh lemon juice
  • 1 tsp. pepper
  • 1 tsp. salt
  • 4 bay leaves, broken in half
  • 4 garlic cloves, minced
  • 4 lemon wedges (garnish)

Directions

  1. Mix lemon juice, oil, salt, and pepper. Add bay leaves and garlic. Pour over chicken. Cover and refrigerate 2-3 hours, rurning several times.

  2. Oil a grill rack and arrange 4-5 inches from heat (or cook on a George Foreman grill on medium heat).

  3. Grill chicken until juices run clear when pierced with a paring knife (4-5 minutes per side or longer).

  4. Squeeze a lemon wedge over each chicken breast before serving.
