Cashew Chicken

Ingredients

  • 3/4 c. chicken broth
  • 1/4 c. soy sauce
  • 2 Tbsp. cornstarch
  • 1/4 c. oil
  • 2 whole chicken breasts, skinned, boned, and cut into 1-inch cubes
  • 1 (6 oz.) pkg. frozen pea pods (or fresh)
  • 8 oz. fresh mushrooms, sliced
  • 1 can sliced water chestnuts
  • 2-4 green onions, sliced in 1-inch pieces
  • 1 c. cashews

Directions

  1. Combine chicken broth, soy sauce, and cornstarch. Set aside.

  2. Heat oil in wok or skillet. Add chicken; stir-fry until white. Stir in pea pods, mushrooms, and soy sauce mixture. Simmer 2 minutes, covered.

  3. Stir in water chestnuts. Simmer 1 minute.

  4. Stir in onions and cashews.

  5. Serve over hot rice.
