Ingredients
- 1 pkg. Golden Curry sauce mix (medium hot)
- 2 Tbsp. oil
- 2 chicken breasts, cubed
- 2 potatoes, peeled and diced
- 1 c. carrots, diced
- 1/2 c. onion, diced (more or less to taste)
- 1 c. green pepper, diced
- 1/2 c. apple, diced
- 1/2 c. pineapple, diced
- 2 1/2 c. water
Directions

Brown cubed chicken in oil in bottom of stock pot until cooked through. Add onions and sauté.

Add 2 1/2 c. water along with the rest of the produce. Bring to a boil and simmer until vegetables are tender (about 10 minutes).

Add curry mix. Stir well to combine. Allow to simmer until desired consistency is reached.

Serve over hot rice.
