Pear & Gorgonzola Green Salad

Serves 4 people

Ingredients

  • 2 large pears
  • 1 tablespoon lemon juice
  • 4 oz Gorgonzola or other creamy blue cheese
  • 6 cups mixed greens washed, dried, torn into bite size pieces
  • 1/2 Cup Basic Vinaigrette made with sherry or balsamic vinegar

Directions

  1. peel and core pears; cut into 1/2 inch chunks and toss with lemon juice. Cover and refrigerate until needed, up to 2 hours.

  2. Crumble gorgonzola into small bits; cover & refrigerate until needed

  3. Toss pears, cheese, & greens together with dressing. Serve immediately.
