Lemongrass-Ginger Soup with Mushrooms

Ingredients

  • 6 cups chicken stock
  • 3 lemongrass stalks
  • 4 slices fresh ginger
  • 3-4 small hot chiles minced (optional)
  • 2 tablespoons nam pla (fish sauce)
  • 6-8 oz roughly chopped oyster mushrooms
  • 2 teaspoons minced lime leaves or lime zest
  • Juice of 1 lime
  • 1/4 cup minced cilantro leaves

Directions

  1. Heat stock over medium heat. Trim tow of the lemongrass stalks then cut into sections and add to stock. Add ginger and 1/4 of minced chiles. Simmer about 15 minutes.

  2. Peel remaining stalk of lemongrass and ginger. Add 1 tablespoon of nam pla and chopped mushrooms.

  3. Optional: Add 2 cups cubed boneless, skinless chiken during last 10 minutes of cooking.
