Buffalo Sloppy Joes

Serves 4 people

Ingredients

  • 1 lb ground chicken, lean
  • handful carrots, shredded
  • handful celery, finely chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • blue cheese crumbles
  • buns
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 1/3 cup hot sauce
  • 1 tbsp worcestershire sauce
  • 8 oz tomato sauce
  • 2 tbsp brown sugar
  • 3 tbsp chicken stock

Directions

  1. heat pan with olive oil and brown chicken.

  2. once brown add onions and garlic.

  3. Once tender (about 3 minutes) add celery and carrots. season with s & p.

  4. meanwhile, combine last 5 ingredients in a bowl and stir until mixed.

  5. when celery and carrots are tender add sauce and stir.

  6. add tomato paste and stir.

  7. let cook for about 5 minutes or so.

  8. serve on buns with blue cheese crumbles.
