Buffalo Sloppy Joes

Serves 4 people
Ingredients
- 1 lb ground chicken, lean
- handful carrots, shredded
- handful celery, finely chopped
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- blue cheese crumbles
- buns
- 2 tbsp olive oil
- 2 tbsp tomato paste
- 1/3 cup hot sauce
- 1 tbsp worcestershire sauce
- 8 oz tomato sauce
- 2 tbsp brown sugar
- 3 tbsp chicken stock
Directions

heat pan with olive oil and brown chicken.

once brown add onions and garlic.

Once tender (about 3 minutes) add celery and carrots. season with s & p.

meanwhile, combine last 5 ingredients in a bowl and stir until mixed.

when celery and carrots are tender add sauce and stir.

add tomato paste and stir.

let cook for about 5 minutes or so.

serve on buns with blue cheese crumbles.
