Ingredients
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1/3 cup green bell pepper, diced
- 1/3 cup celery, diced
- 1/3 cup onion, diced
- 1/4 teaspoon oregano, dry
- 1/4 teaspoon thyme, dry
- 1/4 teaspoon basil, dry
- 1/4 teaspoon black pepper
- 3 cups tomatoes, canned, diced, with juice
- 1 teaspoon sugar
- 1 whole bay leaf
Directions

In a medium-size saucepan, heat olive oil.

Add minced garlic, green pepper, celery, onion, and spices.

Remove from heat and transfer to a food processor with a steel blade.

Add canned diced tomatoes and sugar and puree until smooth.

Place mixture back in saucepan and bring to a boil.

Add bay leaf and simmer 15 to 20 minutes.

Adjust seasoning and remove bay leaf.
