Rotini with Marinara, Broccoli, Carrots, & Peppers

Ingredients

  • 12 oz rotini or penne pasta
  • 1 bag broccoli florets
  • 1 tbsp olive oil
  • 2 medium carrots, thinly sliced
  • 1 small onion, chopped
  • 1 lg red pepper, chopped
  • 2 cans jarred marinara suace
  • 3 oz. sliced pepperoni
  • 1/4 cups loosely packed fresh basic leaves
  • 1/3 cups freshly grated Parmesan cheese

Directions

  1. Heat lg covered saucepot of salted water to boiling on high. Add pasta. Cook, adding broccoli to saucepot 4 minutes.

  2. In 12-inch nonstick skillet, heat oil on medium 1 minute. Add carrots, onion, & pepper; cook 8 minutes. Stir in marinara sauce and pepperoni. Cook 2 minutes.

  3. Drain pasta and broccolio; stir into skillet with marinara mixture. Sprinkle with basil. Serve with parmesan.
