Ingredients
- 5.5 cups of water
- 2 tsp. olive oil
- 1 cup each chopped onion and red pepper
- 2 tbsp. chili powder
- 2 tsp. each garlic powder and cumin
- 28 oz. can crushed tomatoes
- 1 can of pumpkin
- 1 med. zuchinnin, diced
- 1 cup frozen corn
- 1 can black beans, or kidney beans
Directions

Heat oil in a large skillet. Add onion and pepper. Saute 5 minutes. Add chili powder, garlic, and cumin.

Add water, tomatoes, pumpkin, zuchinni, and corn. Bring to a boil over med. heat. Reduce heat and simmer 10 mins. stirring occasionally until veggies are tender.

Stir in beans and heat through.
