veggie chili

Ingredients

  • 5.5 cups of water
  • 2 tsp. olive oil
  • 1 cup each chopped onion and red pepper
  • 2 tbsp. chili powder
  • 2 tsp. each garlic powder and cumin
  • 28 oz. can crushed tomatoes
  • 1 can of pumpkin
  • 1 med. zuchinnin, diced
  • 1 cup frozen corn
  • 1 can black beans, or kidney beans

Directions

  1. Heat oil in a large skillet. Add onion and pepper. Saute 5 minutes. Add chili powder, garlic, and cumin.

  2. Add water, tomatoes, pumpkin, zuchinni, and corn. Bring to a boil over med. heat. Reduce heat and simmer 10 mins. stirring occasionally until veggies are tender.

  3. Stir in beans and heat through.
