Ramen Primavera

Ingredients

  • 1 package chicken ramen noodles
  • 1/2 cup broccoli, chopped
  • 1/2 cup snow peas
  • 1/2 cup red pepper, sliced
  • 1/4 cup carrots, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1 1/2 tablespoons vegetable oil
  • 1/8 cup slivered almonds

Directions

  1. Toast almonds in skillet until lightly browned.

  2. Set aside.

  3. Stir fry vegetables in oil for 1 minute.

  4. Add broken noodles and 3/4 cup water.

  5. Steam for 3 to 5 minutes, stirring occasionally.

  6. Top with almonds and serve.
