Southwest Ramen Vegetable Soup

Ingredients

  • 1 package any flavor ramen noodles
  • 1 can tomato soup
  • 1 cup water
  • 1/2 cup salsa
  • 1/2 cup corn
  • 1/2 cup green beans
  • 1/2 cup kidney beans
  • 1 can enchilada sauce
  • 1/2 cup cooked chicken, chopped (optional)
  • Tortilla chips
  • Monterey Jack cheese, shredded

Directions

  1. Combine tomato soup, water, and enchilada sauce.

  2. Cook over medium heat until hot.

  3. Add vegetables, salsa and chicken.

  4. Simmer for 15 minutes.

  5. Add crumbled noodles and simmer 3 to 5 minutes.

  6. Serve topped with chips and cheese.
