Caramel Apple Cake

Ingredients

  • 1 c. light brown sugar, firmly packed
  • 1/2 c. vegetable oil
  • 2 t. ground cinnamon
  • 1 T. vanilla
  • 2 large eggs
  • 1/4 c. milk
  • 1 3/4 c. all-purpose flour
  • 1 T. baking powder
  • 1/2 t. salt
  • 2 medium tart apples, peeled, cored and chopped.
  • Caramel topping, heated

Directions

  1. In a mixing bowl with an electric mixer, beat together sugar, oil, cinnamon, and vanilla.

  2. Add eggs one at a time, beating well after each addition.

  3. Mix in the milk, flour, baking powder, and salt, stirring just until blended.

  4. Stir in apples.

  5. Pour apple cake batter into a greased 9-in. square pan.

  6. Bake at 350 degrees until cake springs back when touched lightly in the center (about 30 to 40 min).

  7. With a fork, pierce cake all over.

  8. Pour hot caramel topping over cake.

  9. Serve warm or at room temperature with a dollop of sweetened whipped cream.
