Baked Manicotti w/asparagus

Ingredients
- 8 manicooti noodles
- 8 oz asparagus spears
- 8 very thin slices of swiss cheese
- 8 thin slices of smoked turkey breast
- 1 tbsp olive oil
- 1/2 cup chopped onion
- 2 tbsp of minced shallots
- 1 tbsp all-purpose flour
- 1 cup chicken broth
- 2 tbsp dry sherry
- 2 tbsp finely chopped parsley
Directions

coat 7×10 baking dish with olive oil

cook manicotti and drain

arrange in a single layer on a plate

cook asparagus and pat dry

place a slice of ham on a slice of cheese

place 2-3 pieces of asparagus, tip to end at side and roll up within the meat and cheese

insert into manicotti and arrange in baking dish

saute onions and shallots
-
add flour and stir until blended.

add chicken broth and sherry
-
stir until it comes to a boil

reduce heat and simmer while sauce thickens

add parslet and simmer for 5 more min.

pour sauce over manicotti

cover and bake for 10 min or until bubbling and golden at 350
