Brussels Sprouts Paprikash

Ingredients
- 2 tbsp vegetable oil (not olive)
- 1 med onion, chopped
- 1 1/2 lbs brussels sprouts, trimmed
- 3/4 c. chicken or veggie broth
- 3/4 cup sour cream
- 1 1/4 tsp paprika, preferably hungarian
- salt and pepper to taste
Directions

heat oil and brown onion

slice sprouts 1/4 in thick, rinse and drain well

add sprouts to skillet and saute for 1-2 min.

add broth, stir well and cover

braise sprouts ove rlow heat for 6-8 min, until crisp-tender

stir in sourcream, paprika and salt and pepper,
-
simmer over low for several min to warm the sauce
