Brussels Sprouts Paprikash

Ingredients

  • 2 tbsp vegetable oil (not olive)
  • 1 med onion, chopped
  • 1 1/2 lbs brussels sprouts, trimmed
  • 3/4 c. chicken or veggie broth
  • 3/4 cup sour cream
  • 1 1/4 tsp paprika, preferably hungarian
  • salt and pepper to taste

Directions

  1. heat oil and brown onion

  2. slice sprouts 1/4 in thick, rinse and drain well

  3. add sprouts to skillet and saute for 1-2 min.

  4. add broth, stir well and cover

  5. braise sprouts ove rlow heat for 6-8 min, until crisp-tender

  6. stir in sourcream, paprika and salt and pepper,

  7. simmer over low for several min to warm the sauce
