Cauliflower w/Sun-dried tomatoes

Ingredients
- 2 oz sun-dried tomatoes
- 2 lbs cauliflower
- 3 tbsp olive oil
- 1 med onion, chopped
- 3 garlic cloves, minced
- 1/3 c. water
- 1/2 c. coarsley chopped parsley
- hot red pepper flakes to taste
- salt and pepper to taste
- 1/4 c. parmesan or romano
Directions

put tomatoes in saucepan of boiling water for 3-8 mi.

drain and pat dry on paper towels and cut into 1/4 in strips

set aside

slice cauliflowerets 1/4 in thick

heat olive oil and brown flowerets on both sides over med heat

add onion and arlic

saute for 1-2 min.

add water and continue cooking, stiiring constantly for a few more min. until crisp tender

add tomatoes, parsley, pepper flakes, salt and pepper

stir over low heat until tomatoes are hot
-
transfer to serving bowl, add parmesan and toss
