Cauliflower w/Sun-dried tomatoes

Ingredients

  • 2 oz sun-dried tomatoes
  • 2 lbs cauliflower
  • 3 tbsp olive oil
  • 1 med onion, chopped
  • 3 garlic cloves, minced
  • 1/3 c. water
  • 1/2 c. coarsley chopped parsley
  • hot red pepper flakes to taste
  • salt and pepper to taste
  • 1/4 c. parmesan or romano

Directions

  1. put tomatoes in saucepan of boiling water for 3-8 mi.

  2. drain and pat dry on paper towels and cut into 1/4 in strips

  3. set aside

  4. slice cauliflowerets 1/4 in thick

  5. heat olive oil and brown flowerets on both sides over med heat

  6. add onion and arlic

  7. saute for 1-2 min.

  8. add water and continue cooking, stiiring constantly for a few more min. until crisp tender

  9. add tomatoes, parsley, pepper flakes, salt and pepper

  10. stir over low heat until tomatoes are hot

  11. transfer to serving bowl, add parmesan and toss
