Hearty Breakfast Bake

Ingredients

  • 1 package (12 ounces) bulk pork sausage
  • 4 medium green onions, thinly sliced (1/4 cup)
  • 1 medium red bell pepper, chopped (1 cup)
  • 1 package (8 ounces) sliced mushrooms (3 cups)
  • 1/2 bag (20 ounces size) refrigerated loosepack hash brown potatoes (2 1/2 cups)
  • 2 cups shredded Swiss cheese (8 ounces)
  • 1 cup Original Bisquick mix
  • 2 cups milk
  • 1/8 teaspoon pepper
  • 5 eggs

Directions

  1. Move oven rack to middle position.

  2. Heat oven to 375 degrees.

  3. Spray 9 by 12 inch Glad OvenWare pan with cooking spray.

  4. In 10 inch skillet, cook sausage over medium-high heat, stirring frequently, until no longer pink; drain.

  5. Layer sausage, onions, bell pepper, mushrooms, and potatoes in pan.

  6. Stir remaining ingredients with wire whisk until blended – pour over top.

  7. Place pan on cookie sheet.

  8. Bake uncovered 40 minutes.

  9. Sprinkle with cheese.

  10. Bake 5 to 10 minutes longer or until knife inserted in center comes out clean.

  11. Cool 5 minutes.
