Eggs Benedict on savory waffles

Ingredients
- 2 cups all-purpose flour
- 1 1/2 teaspoons salt
- 1 1/2 teaspoon baking powder
- 2 tablespoons sugar
- 2 eggs
- 4 tablespoons unsalted butter, melted
- 2 cups milk
- 1 cup shredded Gruyere cheese
- 1/2 cup potato, peeled, boiled, and mashed
- 3 tablespoons chopped fresh chives
- Freshly ground pepper to taste
- 8 slices ham
- 8 poached eggs
- 1 cup hollandaise sauce
- Chopped green onions for garnish
Directions

Preheat a waffle maker according to manufacturer’s instructions.

In a bowl, whisk together flour, salt, baking powder, and sugar.

In another bowl, whisk together eggs, butter and milk.

Add egg mixture to flour mixture; whisk until combined.

Fold in cheese, potato, chives, and pepper.

Cook waffles according to manufacturer’s instructions until brown and crisp.

Place each waffle on a plate.

Top with 1 slice ham, 1 poached egg, and 2 tablespoons hollandaise sauce.

Garnish with green onions.
