Chinese Green Bean Salad

Ingredients

  • 1 lb green beans
  • 1 tablespoon ginger root fresh & finely chopped
  • DRESSING
  • 4 teaspoons dry mustard
  • 1 tablespoon cold water
  • 2 teaspoons sugar
  • 2 tablespoons soy sauce
  • 3 tablespoons rice vinegar or cider vinegar
  • 2 teaspoons sesame oil dark-roasted

Directions

  1. Trim & slice the beans crosswise, into 1 inch lengths. Cook in boiling water for about 5 minutes. Drain beans, chill in cold water, and drain well. Toss with ginger root and the dressing. Mix dressing before tossing it with beans.
