Ingredients
- 1 lb green beans
- 1 tablespoon ginger root fresh & finely chopped
- DRESSING
- 4 teaspoons dry mustard
- 1 tablespoon cold water
- 2 teaspoons sugar
- 2 tablespoons soy sauce
- 3 tablespoons rice vinegar or cider vinegar
- 2 teaspoons sesame oil dark-roasted

Trim & slice the beans crosswise, into 1 inch lengths. Cook in boiling water for about 5 minutes. Drain beans, chill in cold water, and drain well. Toss with ginger root and the dressing. Mix dressing before tossing it with beans.
