Ingredients
- 2 1/4 cups green beans
- 1/4 cup kidney beans
- 1 tomato quartered
- 1 1/3 teaspoons olive oil
- 1 teaspoon cider vinegar
- 1 teaspoon soy sauce
- 1 clove garlic chopped
- Salt & pepper
- 2 ounces feta cheese crumbled
- 2 ounces soy cheese crumbled
Directions

In a glass bowl, microwave green beans on high until desired firmness (about 8-12 min). When done, plunge in ice-cold water to cool. Drain and place in med-size bowl.

Add kidney beans and quartered tomatoes. Set aside

Combine oil, cider vinegar, soy sauce, garlic, salt & pepper. Toss beans and toms w/mixture.

On a med-size plate, arrange the beans and toms. Sprinkle with feta and soy chesses. Serve chilled.
