Grilled Asian Chicken Salad

Ingredients

  • 1/2 cup soy sauce
  • 1/3 cup creamy peanut butter
  • 3 tablespoons sesame oil
  • 3 tablespoons lemon juice
  • 2 teaspoons ground ginger
  • 1/2 teaspoon dried crushed red pepper
  • 4 skinned and boned chicken breasts halves
  • 1 med napa cabbage thinly sliced
  • 1 med red bell pepper cut into thin strips
  • 1/4 cup fresh cilantro chopped
  • 1 teaspoon sesame seeds toasted
  • Fresh cilantro sprigs garnish

Directions

  1. Whisk together first 6 ingredients; set 1/4 cup mixture aside.

  2. Combine remaining soy sauce mixture and chicken in a heavy-duty zip-top plastic bag. Seal bag and chill 3 hours.

  3. Remove chicken from marinade, discarding marinade.

  4. Grill chicken, covered with grill lid, over med high heat (350 – 400 F) 20 min or until done. cool and cut into thin strips.

  5. Toss together cabbage, bell pepper, and chopped cilantro; top with chicken. Drizzle with reserved soy sauce mixture and sprinkle with sesame sides. Garnish if desired.
