Roast Chicken Salad with Tomato-Garlic Salsa

Ingredients

  • 1 lb tomatoes peeled, seeded, diced
  • 2 cloves large garlic minced
  • 1 fresh hot pepper seeded, ribs removed, minced
  • 3 tablespoons minced scallion
  • 1 tablespoon olive oil
  • 1 teaspoon strained fresh lime juice
  • Salt and pepper
  • Romaine lettuce torn into pieces
  • 12 slices roast turkey or chicken

Directions

  1. Combine tomatoes, garlic, hot pepper, scallions, oil, lime juice, salt, and pepper in a small bowl and stir. Let stand about 30 min at room temp up to 4 hours in fridge. Bring to room temp for serving. Make bed of lettuce on each plate and top with chicken or turkey slices. Spoon a little salsa over chicken. Serve remaining salsa separately.
