Black Bean Salsa

Ingredients

  • 3/4 cup canned black beans drained & rinsed
  • 1 1/2 cups tomatoes diced
  • 1/2 small red onion chopped
  • 1 lime juice
  • 4 tablespoons cilantro chopped
  • 1/2 jalapeƱo pepper
  • Pinch salt
  • Pinch peppercorn

Directions

  1. Mix black beans, tomato, red onion, olive oil, lime juice, and cilantro in med-size bowl.

  2. Seed jalapeno pepper by cutting in half and taking out seeds. Chop half the pepper and add to mixture.

  3. Add salt & pepper. Taste and adjust seasoning.
