Ingredients
- 1 package wood chips
- 15 roma tomatoes
- Red wine vinegar
- Olive oil
- Salt and pepper
- 5 cloves garlic minced
- 1/2 red onion chopped

Start smoking the wood chips. Slice toms in halves, lengthwise. Remove seeds. Line up on rack and place rack over chips. Cover with foil and bake at 375 F until skin on toms starts to pucker. Remove from oven and let cool somewhat. Remove skins from toms. Saute onion and garlic. Add toms, onion, and garlic to blender. Add salt and pepper and vinegar. Start to blend. Slowly add oil until thickens.
