Cheddar and green onion potato skins

Ingredients

  • 4 baking potatoes
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3/4 cup shredded sharp cheddar
  • 2 green onions, thinly sliced
  • sour cream

Directions

  1. preheat to 475

  2. cut each potato lengthwise into quarters

  3. cut away some of the flesh, leaving 3/4 in. thick shell

  4. toss with oil to coat.

  5. place potato skins in pan.

  6. sprinkle with salt and pepper

  7. bake until skins are fork tender and golden, about 30 min.

  8. remove from pan and sprinkle with cheddar then green onions

  9. bake until cheese melts, abotu 5 min. longer

  10. top with sour cream

  11. If you want pizza skins, use pizza sauce and mozzarella.
