Old-Fashioned Oatmeal Cookies

Ingredients

  • 1 cup raisins
  • 1 cup water
  • 3/4 cup margarine (1 1/2 sticks)
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 1/2 cups flour
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground cloves
  • 2 cups rolled oats (Quaker quick-cooking oats)
  • 1/2 cups chopped walnuts (optional)

Directions

  1. In a microwave-safe covered bowl, steam the raisins with the water for 3-5 mins., until raisins are softened.

  2. Drain the liquid into a measuring cup and, if necessary, add more water to make 1/2 cup.

  3. Preheat oven to 400°F.

  4. Blend the margarine, sugar, eggs, and vanilla.

  5. Add the liquid in which you cooked the raisins.

  6. In a separate bowl, mix the flour, baking powder, baking soda, salt, cinnamon and ground cloves. Mix well.

  7. Slowly add the flour mixture to the egg mixture, stirring until it acquires a batter-like consistency.

  8. Add the rolled oats, the raisins and nuts.

  9. Drop teaspoonfuls of the batter onto an UNGREASED cookie sheet.

  10. Bake 8 to 10 minutes, or until cookies are slightly toasted.

  11. Yields 6 to 7 dozen cookies.
