brown butter plum cake

woah, so, so good. much more flavorful that the plum torte from kosher by design. oh, and i tried subbing in half apple. not nearly as good. it needs the tartness of the plum.

Ingredients

  • 8 or so plums, thickly sliced (10 in sweden, plums are smaller here...)
  • 1/2 cup + 3 Tbsp. sugar, divided
  • 1/2 tsp. cinnamon
  • dash nutmeg --that makes it american ;)
  • 1/2 cup butter
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1/2 tsp salt

Directions

  1. Preheat the oven to 350F

  2. Toss the fruit in a bowl with about 2 tbsp. of the sugar, the cinnamon and nutmeg. Spread into the plate.

  3. Melt the butter in a saucepan or small frying pan and keep cooking it for about five minutes until it turns golden. (Swirl the pot occasionally and watch it carefully; it goes quickly from brown to black.)

  4. Pour the butter into a bowl and add the 3/4 cup of sugar, then the eggs and flour and salt. Pour over the fruit and sprinkle with one tablespoon of sugar.

  5. Bake for 40 to 45 minutes until golden and the juices are coming up around the edges.

  6. Delicious with vanilla ice cream.
