Green Beans in Balsamic Vinegar

Ingredients

  • 2 lbs. green beans
  • 2 slices bacon
  • 1/4 c. shallots, minced
  • 3 T. almonds, chopped
  • 2 T. brown sugar
  • 1/4 c. balsamic vinegar

Directions

  1. Cook green beans in boiling water for 2 minutes.

  2. Drain and rinse under cold water. Drain well; set aside.

  3. Cook bacon in a small skillet over medium-high heat until crisp.

  4. Remove bacon from skillet. Crumble; set aside.

  5. Add shallots to bacon fat in skillet; saute 1 minute.

  6. Add almonds; saute 1 minute.

  7. Remove and cool.

  8. Add sugar and vinegar; stir until sugar dissolves.

  9. Add crumbled bacon.

  10. Pour vinaigrette over beans, tossing gently to coat.
