Monday Night Brownie Sundaes

Ingredients

  • 5 tablespoons unsalted butter, cut into 5 pieces
  • 4 ounces bittersweet chocolate, coarsely chopped
  • 2 ounces unsweetened chocolate, coarsely chopped
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon instant espresso powder (optional, but really good)
  • 1/2 teaspoon salt
  • 1/3 cup all-purpose flour
  • 1 cup chopped walnuts (or you can do what we did and substitute chocolate chips)

Directions

  1. Preheat oven to 325 degrees.

  2. Melt butter and chocolate together over a double boiler.

  3. When melted, remove from heat and beat in sugar with a hand mixer.

  4. Beat in eggs, vanilla and espresso powder (I used instant coffee powder, because that’s what I had).

  5. Sift in the salt and flour and beat to incorporate.

  6. Lastly, stir in nuts or chocolate chips, if using.

  7. Line a square pan with parchment paper and pour batter in.

  8. Bake for 30-33 minutes.
