healthy parve chocolate cake

can garnish with raspberry preserves and rasberies. The longer it sat in the fridge the richer the chocolate taste!

Ingredients

  • 8oz semi sweet chocolate
  • 1/4 cup cocoa powder
  • 1/2 cup brown sugar
  • 1lb silken tofu
  • 1 large egg
  • 1 and 1/2 TBS flour
  • 1/2 cup chocolate soy milk
  • 1/2 tsp instant coffee granuals
  • 2TBSvanilla
  • ------
  • 4 egg whites
  • 2TBSwhite sugar
  • cream (use for whipping and garnishing)
  • optional:strawberries

Directions

  1. eheat oven to 300. butter 9 inch springform with parchment paper on the bottom

  2. melt chocolate

  3. mix in with other first half (to line) ingredients with blender (I used hand blender!)

  4. beat egg whites till stiff but not dry (whatever that means)

  5. add sugar and beat for another minute

  6. slowly (in stages) and carefully mix in the two batters

  7. pour into springform pan and bake 45 min till set around edges but still jiggly in the middle.

  8. Cool for 2 hr – 2 days

  9. Garnish with whipped cream and strawberries
