Salt & Pepper Calamari

Ingredients

  • 1kg calamari (squid)
  • 1/2 cup lemon juice
  • 1 cup corn flour
  • 1 tbsp salt
  • 3/4 tbsp ground white pepper
  • 1 tsp sugar
  • vegetable oil, for deep frying
  • 2 egg whites, lightly beaten

Directions

  1. wash & pat dry the calamari and cut into thin rings. put the rings in a flat nonmetallic dish and pour the lemon juice on top. cover and refrigerate for 15 mins. drain & pat dry.

  2. combine the corn flour, salt, pepper & sugar in a bowl. fill saucepan with 1/3 full of oil and heat to 180C. dip the calamari into the egg whites and dust with the corn flour mixture, shaking off any excess. add the calamari to the oil in batches, deep frying for abt 1-2 mins or until golden. serve immediately.
