Bird in a bagel

Ingredients

  • 1/2 apple, finely chopped
  • 1 cup shredded cheddar
  • 4 slices canadian bacon, cut in half and then into thin strips
  • butter
  • 2 bagels, split
  • 4 eggs

Directions

  1. combine apple, cheddar and bacon

  2. season w/salt n pepper

  3. heat butter in skillet and add bagels, cut side down

  4. crack an egg into each bagel hole

  5. cover and cook for 3-4 minutes, or until eggs are firm enough to flip bagel.

  6. flip gently and top each bagel with apple mixture

  7. cover and cook until cheese melts
