Tomato Soup

Serves 8 people
Ingredients
- 2 T olive oil
- 1 large onion
- 2 carrots
- 3 red potatoes
- 2 cloves garlic
- 1 14oz can diced tomatoes
- 1 14oz can tomato sauce
- 1 bay leaf
- 1 t thyme
- 3 T basil
- 3 T miso
- 6 c water
- salt and pepper
Directions

Saute onion, carrot, and potatoes in olive oil until soft, 7 minutes. Add garlic and cook another minute. Add remaining ingredients, bring to a boil, lower heat and simmer 30 mintues until potatoes are tender.

Serve with grilled cheese sandwiches.
