Tomato Soup

Serves 8 people

Ingredients

  • 2 T olive oil
  • 1 large onion
  • 2 carrots
  • 3 red potatoes
  • 2 cloves garlic
  • 1 14oz can diced tomatoes
  • 1 14oz can tomato sauce
  • 1 bay leaf
  • 1 t thyme
  • 3 T basil
  • 3 T miso
  • 6 c water
  • salt and pepper

Directions

  1. Saute onion, carrot, and potatoes in olive oil until soft, 7 minutes. Add garlic and cook another minute. Add remaining ingredients, bring to a boil, lower heat and simmer 30 mintues until potatoes are tender.

  2. Serve with grilled cheese sandwiches.
