Stuffed Sweet-and-Spicy Poppers

Ingredients

  • 1 c pecans
  • 1 1/2 c baking mix
  • 1/2 t salt
  • 1/2 t pepper
  • 1 11oz jar whole jalapeno peppers, drained
  • 1/2 8oz pineapple cream cheese
  • canola oil
  • soymilk

Directions

  1. Bake pecans at 350 ffor 10 minutes, stirring once after 5 minutes. Let cool 10 minutes.

  2. Process pecans, baking mix, salt, pepper in a food processor 8 to 10 seconds. Place in large bowl.

  3. Rinse peppers and cut lengthwise. Discard seeds and membranes, pat dry.

  4. Spoon 1 t cream cheese into each pepper half. Dip in soymilk then pecan mixture.

  5. Fry 30 sec to 1 minute in hot oil and drain on paper towels.
