Late-Summer Vegetable Soup

Serves 6 people
Ingredients
- 4 ears corn
- 2 T olive oil
- 1 large onion
- salt and pepper
- 4 c vegetable broth
- 2 large zucchini, halved and thinly sliced
- 8 oz green beans, trimmed and cut
- 1 14oz can diced tomatoes
- 1/2 c orzo
Directions

Cut kernels off corn. Heat oil in pot and cook onion 5 minutes until soft. Add broth and 2 c water and bring to a boil. Add zucchini, green beans, corn, tomatoes, and orzo. Cook uncovered until orzo is tender, 11 minutes. Season with salt and pepper.
