Broccoli Chowder with Corn and Bacon

Serves 4 people
Ingredients
- 4 slices Smart Bacon
- 1 large onion
- 1/4 c all-purpose flour
- 4 c vegetable broth
- 1 large potato
- 1 head broccoli
- 10oz frozen corn kernels
- 1/2 t dried thyme
- 1 c soymilk
- salt and pepper
Directions

Cook bacon and set aside. Cook onion in oil until soft, 7 minutes. Add flour, cook stirring constantly 30 seconds. Add broth and potato, bring to a boil. Reduce to a simmer and cook 10 minutes until potato is tender. Add broccoli, corn, thyme, and milk; cook until broccoli is crisp-tender, 10 minutes. Season with salt and pepper. Top with bacon.
