Cashew Ricotta

Ingredients
- 1/2 c raw cashew pieces
- 1/4 c lemon juice
- 2 T olive oil
- 2 cloves garlic
- 1 lb firm tofu
- 1 1/2 t dried basil
- 1 1/2 t salt
Directions

Process cashews, lemon juice, olive oil, and garlic until thick and creamy. Add crumbled tofu and process until well blended. Blend in basil and salt.
